Demi-Glace is a rich brown sauce foundational in French cuisine, commonly used as a base for other sauces, or as a glaze and finishing touch for various dishes. It is crafted by slowly simmering a mixture of equal parts brown stock and Espagnole sauce – the latter being one of the classic five mother sauces in French cooking, made from brown roux, mirepoix, and tomato paste. This mixture is enriched with herbs and, occasionally, wine, then reduced by half to intensify its flavours, yielding a thick, glossy sauce with a profound, robust taste.
