150g bourke street bakery crostinis
2 tbsp unsalted butter, softened
200g bourke street bakery mixed berry jam
1 (225g) wheel of Brie, sliced into 1cm-thick pieces
¼ cup caster sugar
Description
Mini Brie toasts are an easy yet impressive appetiser, perfect for entertaining. The crisp, caramelised sugar topping cracks to reveal warm, gooey Brie over a layer of sweet jam. Assemble the crostini in advance and brûlée just before serving for the best texture and a bit of theatre.
method
Spread a thin layer of cherry jam on each toast.
Top with a slice of Brie, trimming as needed to fit.
Sprinkle a scant teaspoon of sugar over each piece of Brie.
Using a kitchen torch, caramelise the sugar until golden and bubbly. (Alternatively, place under a grill for 1-2 minutes, watching closely to prevent burning.)
