Baked and raised from humble beginnings in Surry Hills, Bourke Street Bakery has grown to become one of Sydney’s most iconic food destinations. The beginnings of Bourke Street Bakery date back to the winters of 2004. From a humble corner shop in Surry Hills to a Sydney icon, founders David McGuinness and Paul Allam shared a passion for handcrafted goods that used the finest ingredients.

We've partnered with Mayers Fine Food, bringing some of the finest Belgian Chocolate to our region. Callebaut chocolate, established in 1911, continues its long-standing tradition with recipes that have been cherished and passed through generations.

Oats are a superfood, and to truly reap their benefits, sourcing top quality is essential. Based in Walla Walla, NSW, Hume Country Mill boasts a 125-year legacy in local agriculture and is a leading producer of the oats processed at their facility.

We've partnered with CopperTree Farms to introduce a specialty butter into our recipes, specifically made for baking and cooking. Made using traditional French techniques, this butter enriches our entire range - from delicate pastries and cakes to our celebrated pies and sausage rolls.

Since our inception in 2004, Wholegrain Milling has been our trusted supplier, providing top-notch flour and grains for our bread and pastries. This partnership thrives on our mutual commitment to quality and sustainability, strengthened by the bond of our 20 year relationship.

When it comes to salt, purity and natural quality are key, which is why we've chosen Olsson's Salt for all our needs. Their salt is produced without any chemical processes, ensuring it's completely natural - a guarantee we stand by.

Our commitment goes beyond just bread and pastries; coffee has emerged as the ideal companion - truly a match made in heaven. That's why we've partnered with Sunny Coffee, a local roaster that embodies the same values we hold dear, while offering a tailored approach to each new origin that walks through our doors.

With over 30 years in the foodservice industry and just a stone's throw from our Banksmeadow facility, Haverick Meats is our trusted supplier of high-quality beef, lamb, and pork for all our pies and sausage rolls.

For the last six years, Rooftop Bees has managed beehives on the roof of Bourke Street Bakery in Banksmeadow, producing an abundant supply of exquisite honey. This premium honey is available for sale at all our bakery locations.
