The beginnings of Bourke Street Bakery date back to the winters of 2004. From a humble corner shop in Surry Hills to a Sydney icon, founders David McGuinness and Paul Allam shared a passion for handcrafted goods that used the finest ingredients.

For the last six years, Rooftop Bees has managed beehives on the roof of Bourke Street Bakery in Banksmeadow, producing an abundant supply of exquisite honey. This premium honey is available for sale at all our bakery locations.
We've partnered with CopperTree Farms to introduce a specialty butter into our recipes, specifically made for baking and cooking. Made using traditional French techniques, this butter enriches our entire range - from delicate pastries and cakes to our celebrated pies and sausage rolls.
