
This Easter, we’re excited to introduce our Spiced Rum Butter, a joint creation by Bourke Street Bakery and Brix Distillery. This product merges our shared passion for distinctive flavours into a uniquely Australian Rum Butter.
Building on the success of our much-loved Christmas Brandy Butter, we decided to shake things up for Easter with a fresh twist. That’s when Brix Distillery came to mind – a local rum distillery that shares Bourke Street with us in Surry Hills. Having previously teamed up in 2022 to create the ‘Trail Mix’ rum, it felt natural to collaborate again.
The process begins with Brix Spiced Rum, aged in locally sourced wine barrels and enriched with a mix of vanilla, grapefruit, mango, cinnamon, macadamias, and native lemongrass. This aromatic blend is then expertly combined with Copper Tree Farms’ Australian Butter and icing sugar, whipped to silky perfection, and carefully piped into jars.
Much like the numbering of limited edition rums, we’ve added our own numbering system to the butter jars, making each one a collectable item with only 400 available.
Enjoy this spread over pastries, on toast, or even smeared on banana bread. Or in true Easter fashion, spread it over your Hot Cross Buns!
