80ml Extra Virgin Olive Oil
4 Brown Onions, finely chopped
6 Garlic Cloves, crushed
130 g Diced Bacon
650g Bourke Street Bakery Breadcrumbs
6tbsp Fresh Thyme, chopped
6tbsp Flat-Leaf Parsley, chopped
260g Raisins (soaked in hot water for 5 minutes and drained)
260g Currants (soaked in hot water for 5 minutes and drained)
520g Unsalted Butter, finely diced
1tbsp Salt
1tsp Ground White Pepper

Start by heating some olive oil in a frying pan.
Add the onion, garlic, and bacon to the pan. Cook over low heat for about 12 minutes, or until the onion softens.
Remove the pan from heat and allow the mixture to cool.
Once cooled, combine the onion mixture with all other ingredients. Mix by hand to blend well.
Carefully stuff the mixture into the bird’s cavity, ready for roasting
