Ingredients

5-6kg Whole Leg Ham

300g Bourke Street Bakery Raw Honey

2 Fresh Orange (1 for the glaze/1 for the ham)

150g Brown Sugar

4Tbsp Dijon Mustard

4Tbsp Cinnamon

50g CopperTree Farm Butter

There’s an undeniable charm to a Honey Glazed Ham, shimmering at the centre of a festive table. It transcends the ordinary, a sublime departure from everyday deli slices.  Even those typically indifferent to deli ham are captivated by the rich, caramelised charm of a well-glazed centrepiece. To further enhance this glaze, we’ve used our own beehives located on top of our Banksmeadow Bakery, just to make it that little bit sweeter.

Preheat the oven to 140°C

Remove the skin and carefully score the fat to enhance flavour absorption.

Combine all glaze ingredients in a saucepan. Heat while stirring until the sugar dissolves and the butter melts.

Place the ham in the dish. Squeeze the juice of one orange evenly over the ham and leave the spent orange skin in the dish for added flavour.

Brush the ham generously with the glaze. Bake for 15 minutes, then baste again. Continue to baste several times throughout the cooking process.

The ham should be beautifully glazed and ready to serve after 1.5 to 2 hours.

Allow to rest for 20-30 min before serving. Glazing the ham can be done the day before it is needed.
