Ingredients

4 large ripe tomatoes, finely chopped

1 small red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

2 tablespoons balsamic vinegar

salt and freshly ground black pepper

150g bourke street bakery crostinis

This bruschetta is perfect as a starter or snack, especially during the warmer months when tomatoes are at their peak!

method

In a mixing bowl, combine the chopped tomatoes, red onion, minced garlic, and chopped basil.

Drizzle with balsamic vinegar and olive oil.

Season with salt and pepper to taste.

Mix everything together gently and let the mixture sit for about 15-30 minutes at room temperature to allow the flavours to meld.

Rub the crostinis with the whole garlic clove to infuse them with a mild garlic flavour.

Spoon a generous amount of the tomato mixture onto each slice of toasted bread.

Serve immediately, garnished with additional basil if desired.
