200g coppertree farm unsalted butter, softened

125g icing sugar, sifted

60ml brix spiced rum

Description

Rum butter is a rich, indulgent spread made from a blend of softened butter, powdered sugar, and dark rum. A classic accompaniment to holiday treats, it pairs beautifully with Croissants, Toast, and of course, Hot Cross Buns, infusing them with a warm, caramel-like sweetness.

The butter is whipped to a silky consistency, allowing the deep, spiced notes of the rum to shine through. As it melts over freshly baked desserts, it creates a luxurious, boozy finish that enhances every bite.

Method

To make the rum butter, put the butter and icing sugar in the bowl of an electric mixer fitted with a whisk attachment.

Cream the butter and sugar on medium speed until pale and fluffy.

With the motor still running, gradually pour in the rum, making sure it disappears into the mix as it is added.

Once all the rum is incorporated, transfer to an airtight container and refrigerate.

Note

The butter will keep for 3 months in the refrigerator. Serve the rum butter at room temperature.
